Friday Fun Stuff

The enchiladas were dynamite! I will definitely be making them again. Here is the recipe in case you wanted to try it:

Ingredients
1 can Campbell's® Cream of Chicken Soup
1 container (8 ounces) sour cream
1 cup Pace® Picante Sauce
2 teaspoons chili powder
2 cups chopped cooked chicken
1 cup shredded Monterey Jack cheese (about 4 ounces)
6 flour tortillas (6-inch), warmed
1 medium tomato, chopped (about 1 cup)
1 green onion, sliced (about 2 tablespoons)

Preparation
Stir the soup, sour cream, picante sauce and chili powder in a medium bowl. Stir 1 cup picante sauce mixture, chicken and cheese in a large bowl. Spread about 1/4 cup chicken mixture down the center of each tortilla. Roll up and place seam-side down in a 3-quart shallow baking dish. Pour the remaining picante sauce mixture over the filled tortillas. Cover the baking dish. Bake at 350°F. for 40 minutes or until the enchiladas are hot and bubbling. Top with the tomato and onion.

You can find this recipie and more on Campbell's Kitchen There is recipie naviagtor to help you determine what to make by calorie content, fat content , etc. It is a pretty spiffy tool!

I have been trying to find work shoes for friggin weeks now and I finally found a pair. Part of my issue is that I have wide feet (WW) and high arches. The other issue is that my employer requires closed toes and heels so no mules, sling backs, peep toes or sandals. It poses quite a dilemma let me tell you. I seem to have good luck with Easy Spirit but the closest store is at least 45 miles from home so it is not easy to get to. Well, I found these on their web page and they arrived yesterday. They are like slippers they are so comfortable. Since I know they fit, I have decided to buy another pair as back up. That way I won’t have to go through this laborious process again anytime soon.

I don't have any real plans for the weekend. I will be kitty sitting until Tuesday but I just need to go by twice a day so no biggie. Maybe I will get my arse to the gym. I am sick of saying it and not going. Pfffftttt!!! I just need to make it happen. Why oh why am I so resistant to going!?!?! I definitely want to get on my bike. I need to take advantage of the nice weather before it gets crappy again. Hope you all have a great weekend! Until next time...

P.S. I have recently received some blog awards and wanted to acknowledge them but will formally post them soon. Thanks to all of you ladies who thought of me.

  1. Katie, I do not like gyms. I try to like them, I really do. But I recently cancelled my membership (which was only $10/month!) because I realized I had not darkened the door of the gym in one whole year.

I just prefer other types of workouts and would rather spend the $10 each month on new running shorts or a new DVD.

Have a great weekend my friend!

  3. Those shoes are classics! Good for you for finding them. I don't mind the gym but the treadmill has caused me knee pain. Guess I have to be one of the elliptical girls now. Have a good weekend.

  4. Those shoes are nice, but your employer makes you wear heels? Can they do that?!? Wild.

  6. Thanks so much for posting the recipe! Love the shoes. I have wide feet too, so I know how hard it is to find quality, comfortable shoes. :)
