St. Patrick's Day!

Had a decent day yesterday. Dave had three games (he is an umpire) so I was on my own again. I ended up having a veggie burger with some leftover salad from the other night. Speaking of salads, I have been throwing nuts and either raisins or craisins in to add a little oomph to my salads and I'm really liking it. An easy way of adding protein and fruit to our meals. Did some Wii Resort and some resistance bands.

Tonight I am planning on going to Blinky's to have some corned beef and cabbage. I only have it once a year but it is always tastes good. I have actually never cooked corned beef myself. Have you? Do you even like it?  There is a gentlemen who prepares the food for the bar and his name is Heinzie. He is a wonderful chef and he's quite the gardener too! You should see the tomatoes he grows!! I will do my best not to imbibe (no green beer!) but I may have one or two cocktails. I will be sure to account for the calories either way. Until next time...

  1. Your dinner sounds like it's going to be great! My mom makes awesome creole beef (corned beef with spices) and rice, but we're changing up our St. Patty's Day tradition and going to a place called Tilted Kilt tonight. Hopefully their food will be as good as yours will be. Happy St. Patrick's Day to ya!

  2. I have made it - it's super easy actually. But not this year. I've been out doing one thing or another every night this week so I haven't had the time. Oh well, I'll be doing some Muay Thai tonight and won't even care about it by the time I get home! Hmmmm, maybe I'll make some over the weekend!

  6. Yo will have to learn to make bubble and squeek now that you know your roots!! :)

    And Colcannon - one of my favs. basically bubble and squeek (potatoes and cabbage or kale) with corned beef in it.

    Surprisingly it can be done light!

  8. It's kind of hard to mess up corned beef - I just normally throw it in my crock pot and its ready when I get home - just look for a lean cut - so many of them can be half fat!

  9. We always either boiled our corned beef and cabbage and potatoes all together or we cooked it in the crock pot. Super easy and delish. I try not to make it ourselves because I have zero control over the corned beef. I just keep going back for more.
