Tuesday Tales

Had a decent rest of the day yesterday. I did not eat much at all during the day (oatmeal and rice pudding) until I came home from work. We used some leftover chicken and tossed it in a salad called Strawberry Fields and some garlic toast with it.  It was tasty! I really like the dressing which was a Strawberry Vinegarette. I added a few dried cranberries to enhance it as well. Had Skinny Cow ice cream sandwich for dessert. They changed their packaging recently and it seems like they created more then less. Now it is in a cardboard box individually wrapped.

Tonight we will be having fish. I like almost all fish except for catfish and tilapia. Catfish tastes muddy to me and the tilapia just doesn't have much substance or flavor. I'm grateful to live in an area where fresh fish is abundant. There are so many options available and the ways of preparing it are endless. One thing I have really wanted to try is to Pan Sear some Ahi Tuna. Think I will look up a recipe and see what it entails. I can't imagine it would be that hard to do. It's funny... as I am writing this post, I am thinking... who is this person who actually likes to cook and looking for ways of being creative. I haven't always cooked like I do now. My friends and trial and error are what taught me. My mom is not much of a cook. In fact, she stopped cooking when my dad died but that is a whole other blog post. Until next time...

  1. I'm trying to eat more fish. I love talapia with some fresh lemon juice.

    I enjoy reading you blog and I'm going to research the Fitbit, I'd love to have one! It might help me lose the 60 some pounds I've got left.

  4. I miss having a lot of fresh seafood! I grew up on the East Coast but am now in Chicago, the land of tilapia. What I wouldn't give for a good piece of bass that I don't have to pay through the nose for!
